BUTTERNUT SQUASH RAVIOLI FROM SCRATCH!

I love ravioli! Actually I love anything that involves a filling wrapped in dough (ie perogies, dumplings, empendadas, calzone springrolls, etc). I recently made ravioli from scratch on valentines day weekend and it was such a fun experience. It is a bit lengthy so make sure you can devote a good 4 hours to it and make the filling the night before. I lucky snapchatted the whole experience so I was able to grab those videos and make a little film for you down below so dont forget to check that out!!! Enjoy!

INGREDIENTS
Filling - **Make the butternut squash filling the night before so that you can let it chill overnight.
1-2 Lbs Butternut Squash or 2 Packs of Pre-Peeled and Cut Butternut Squash
2 TBS of Olive Oil
Salt an Pepper (as desired)
1/8 Tsp of Ground Nutmeg
1/2 a Cup Parmesan or Ricotta Cheese or both! (1/2Cup of Ricotta, 1/4 Cup of Parmesan)

Dough-
3.5 Cups of All Purpose Flour
4 Eggs (3 For the dough 1 for the ravioli wash)
3 Tbsp Olive Oil
1/2 TSP of Salt
1/2 Cup of Water

Sauce -
8 Tbsp of Salted Butter
2 Tbsp of Shallots (minced)
1 Tbsp of Fresh Sage (Chopped)

OTHER MATERIALS

Pasta maker - I have a Lagostina Pasta Maker with Ravioli Attachment that works really well which I bought for around $67 CAD @ Canadian Tire! I didn't use the Ravioli attachment but you can if you like.

It essentially looks like this:

DIRECTIONS:

First we are going to make the filling. Preheat the oven at 350 degrees.

In a bowl combine your chopped and peeled butternut squash, olive oil, salt, pepper and nutmeg. Toss so that it is evenly covered before placing it on a baking tray covered in aluminum foil and popping it into the oven for 30 minute (or until tender).

Once the squash is tender remove it from the oven, transfer to a bowl and mash it with a potato masher. Once nicely mashed stir in your cheese and mix until it is fully incorporated. When ready cover with plastic wrap and place in the fridge overnight.

Next we are going to make the dough using the 'well method'. Place your flour on the counter and create a well or hole on the inside of the mound. Add your eggs, salt and oil to the inside of the hole and slowly start to stir the contents inside the hole with a fork. Slowly using the fork start to incorporate the flour wall lining the whole. DO THIS SLOWLY! Once the dough starts to form and thicken you can ditch the fork and use your hands to knead the dough. If you feel like the dough is dry keep kneading and add water for assistance.

When you are finished and have one big dough ball place in a large bowl, add a little olive oil to prevent the dough from drying out and cover with plastic wrap. Set aside for 30 minutes or so.

Prep your pasta maker! You are going to want to start on the widest (#1) setting and work your way to the thinnest (#9)

Break the dough into three parts and start to feed it through the pasta maker moving the knob each time from widest to thinnest setting. Make sure to help your dough through so it doesn't get caught or jammed.

Place all strips of previously rolled out pasta on the counter which has been already lightly covered in flour.

Use the sheets with the larger width as the ravioli tops and the ones with the smaller widths as your ravioli bottoms.

Start placing your butternut squash fillings 1 inch apart along the smaller width pasta. Use the egg wash to create a grid seal around each dab of filling. Place the wider pasta strip (top) on top.

Press the top down the center and each row so that it stretches out nicely over the filling mounds. Cut the dough in equal sections trying to create a 1/2 inch perimeter around the mounts.

Using a fork press on the outer corners to help the egg wash inside create a seal between top and bottom pasta layers and fully seal in the butternut squash filling inside.

Once sealed fully, place on a baking sheet lined with wax paper. Once you are finished making ravioli place the baking sheet covered in plastic wrap in the fridge to store until you are about 20-30 min from your meal time.

When you are ready boil a pot of water. Once the water is boiling add a tsp of salt and place the amount of ravioli you want to cook in the boiling water.  You can store the remaining amount by rolling it in wax paper and placing it in a ziplock bag and freezing it.

Next start to prep your sauce. In a sauce pan on medium heat add in your butter followed by your minced shallots. Once the shallots start to become clear add in your sage. Allow the sage to release its flavor into the butter. Stir so that it doesn't burn. Add some salt

After about 6-7 minutes the ravioli should be ready and float to the top. Test to see if the pasta layers are fully cooked. When it is cooked drain and add to your sauce pan with butter and sage. Allow the ravioli to become fully dressed by the sauce before plating.

Add Parmesan cheese on top and garnish before serving. ENJOY!

SPICY LOBSTER QUINOA PASTA - GLUTEN FREE

INGREDIENTS:

1 TBSP of Olive Oil
1 Medium Onion (chopped)
5 Cloves of Garlic (minced) - you will need to split 3/5 cloves for the sauce
1 TSP of Chili Flakes
1 TSP of Dried Basil
1 TSP of Dried Oregano
Salt and Pepper to taste
1 Bottle of Tomato Pomodoro (strained tomato sauce)
1 TSP of Butter
6 Lobster Tails (thawed 4 chopped up 2 left whole)
1 Pack of Quinoa Pasta

DIRECTIONS:

Add oil to a sauce pan and heat up on medium heat. Add in your onion and 3 cloves of garlic and let them sweat.

Add in chili flakes, basil, oregano and salt and pepper. Stir around and let evenly mix

Once onions are garlic are nicely cooked add in your bottle of pomodoro tomato sauce, reduce heat to low and set aside to simmer.

Start to boil your water for the pasta.

Salt and pepper your chopped lobster bits lightly

In another skillet add in your butter and let melt on medium -low heat. Add in the remaining garlic and allow to season the butter for a second until you add in the chopped lobster bits.

Once the lobster bits are cooked through (apx 4-5minutes) then add cook lobster bits to the tomato sauce. Stir lobster into the tomato sauce and leave to continue to simmer

When the water is boiling add 1 TSP of salt to the water before adding in your quinoa pasta. You need to stir quinoa pasta for the first two minutes so that it doesn't stick together then let it continue to cook for an addition 10 minutes before it is al dente.

In another pan we are going to add in 1 cup of water and steam the remaining two lobster tails for 3-4 minutes. One ready remove lobster tails from water and set aside.

One ready dump pasta water and add pasta to sauce. Mix in and plate hot. Top with full steamed lobster tail and serve. ENJOY

SPAGHETTI SQUASH PESTO

 

Spaghetti squash is actually super easy to make it just takes more time then wheat based pasta. If time is not a factor it is a great way to have a gluten free meal that taste great. This recipe is for a spaghetti squash pesto pasta but you can technically make the sauce whatever you want using the same principles. If you want to simplify the recipe even more you can buy a pre-made pesto sauce. If you are cooking for a group of more then two people this can be a very economical healthy meal to make as the ingredients wont cost you very much. 

INGREDIENTS

1 Spaghetti Squash around 3lbs
1 Small Jar of Pre-made Pesto
1 Block of Parmesan Cheese

If you want fresh pesto here are ingredients you will need

1/2 Cup of Olive Oil
3 Cups of Basil
2 Cloves of Garlic
1/4 Cup of Pine Nuts
3/4 Cup of Grated Parmesan Cheese
Salt and Pepper to taste


DIRECTIONS:

Preheat oven to 375 degrees.

Throw in the spaghetti squash whole for about 60 minutes.

Remove the spaghetti squash from the oven and cut in half and take out the seeds.

If the spaghetti squash is not cooked/stringy enough place back in the oven for an additional 10 minutes.

While the squash is in the oven you can either start to make your pesto or use a pre-made pesto. Warm up the pre-made pesto in a skillet or place the basil, garlic, and pine nuts in a food processor. Pulse until coarsely chopped before adding in the olive oil continuing until fully incorporated. Next move to a bowl and add in the Parmesan and salt and pepper - Mix them in.

Finally once the squash is ready remove from the oven and start to shred the inside of the squash with a fork and place it in the skillet or bowl with the pesto. Mix the two together to the pesto and squash is evenly distributed.  Serve.

MY EPIC LASAGNA RECIPE!!!!

I feel like before we get into this recipe I have to give some inspiration credit to my friend John Fazio who told me about his eggplant parmigano -pasta less and gluten free lasagna. On its own his dish sounds pretty epic but I am a big meat and pasta lover so I put my own twist on his dish to create this awesomeness!!! It is a bit of a lengthy process so make sure to start way a head of time or the day before and than once prepared its about an hour to bake and serve! Okay here we go!

So there is five parts to this recipe - 1st make your meat sauce, 2nd Bake your eggplant, 3rd Make your ricotta and spinach layer, 4th assemble lasagna and 5th bake it to its full glory. Lets start with the ingredient breakdown and ideally your shopping list :)

INGREDIENTS - Meat Sauce

2 TBSP - Olive Oil
1 large - Spanish Onion (diced)
2 Cloves - Garlic (finely chopped)
1 Lbs - Ground Beef
150 Grams - Pancetta (diced into squares)
1400 Ml - Strained Tomato Puree
1 TBSP - Basil
1 TBSP - Oregano
1 TSP - Chili Flakes (optial)

INGREDIENTS - Eggplant

3 Eggplants (Wash, cut off both top and bottom and slice into hockey pucks about pinkie finger size widths)
4 TBSP - Salt

INGREDIENTS - Ricotta and Spinach Layer

1 Cup Frozen Spinach (leave out to defrost)
1 Cup Ricotta
Salt and Pepper

INGREDIENTS - Lasagna Assembly

1 Box - Lasagna Pasta (I used no name brand that didn't require pre-cooking)
2 Cups Mozzarella (I used two kinds, one soft one that I grated and added to the parmigano below and one harder one that was already cut in slices)
1 Cup Parmigano (grated)

 

DIRECTIONS - Meat Sauce

Put diced pancetta into deep pot. Bring to medium heat

Cook the pancetta for 5 minutes until golden brown. If you have a lot of bits stuck to the bottom, add a little water to deglaze.

Add diced onion and sweat it for 3 minutes.

Add in the garlic and sweat for 2 more minutes

Add dried oregano, dried basil, and chili flakes (or to your taste)

Stir all ingredients together and cook for 3 minutes

Season ground beef with salt and pepper and cover the bottom of the pan to get a nice sear on the meet. Salt and pepper the other side. Cook for 3 minutes on medium to high heat to get it seared.

Once you have seared the meat, flip to the sear the other sides. At this point you can start to break up the meat. You can break it into larger pieces or smaller pieces depending on your preference. Try to mix and onion mixture and meat while you do this.

Once the meat is browned, but not cooked through, (3-7 more minutes depending on how much ground beef) pour in the bottles of strained tomatoes.

Stir in the strained tomatoes so that the meat is evenly distributed and lower heat to a low-simmer temperature. Leave uncovered or slightly uncovered and simmer for 1-2 hours (or more if you want it very thick), stirring every 15 minutes or so.

*You can start the eggplant now return to the sauce later)

After cooking the sauce down, taste to see if you need more seasoning. There should be enough salt from the pancetta and the seasoned meat, but season to taste.

DIRECTIONS - Eggplant

Toss eggplant pucks in salt and let sit/drain for 30 min (eggplants have a lot of water inside them so the salt will pull it out and help soak it up

* You can start the ricotta and spinach spread at this point while you wait and return to the eggplant

Preheat oven at 375 degrees. Bake Eggplant on parchment paper for 20min or until they start to go golden (dont let them burn)

DIRECTIONS - Ricotta and Spinach

Mix together the defrosted (unfrozen) spinach, ricotta salt and pepper in a bowl.

DIRECTIONS - Assembly

First add in some meat sauce to the bottom of the lasagna dish then add in your uncooked lasagna pasta stripes. They can over lap a little. (the water/juice of the sauce will cook the pasta dont worry)

You can add another layer of sauce followed by a layer of eggplant followed by ricotta and a mix of the grated mozzarella and parmigano mixture. Start you next layer with pasta stripes again. Keep doing this for three layers (or as many as you can) until the dish is full!

On the final layer add more sauce and the pre-sliced mozzarella pack along with more grated parmigano.

Cover and keep in the fridge until you are ready to cook.

When you are ready to cook preheat oven to 375 and cook for 45 minutes to 1 hour. You can test to see if the pasta is cooked by slicing in the middle of the dish and seeing if its cooked.

QUINOA PASTA WITH BACON, SPINICH AND GOAT CHEESE - GLUTEN FREE OPTION

I originally found this sauce recipe on Pinterest (I'm a huge pinner) and I am always nervous to try them. When it comes to food on Pinterest everything always looks appetizing but I feel like itsbecause of the photography not necessarily because of the taste. I see a photo and my imagination and pallet start to imagine what it would taste like. I obviously subconsciously imagine what I want it to taste like more then it probably does in reality. This recipe was one of those pleasantly surprising ones that matched my taste buds imagination. Although I altered some ingredients and ingredient portions it essentially takes the same foundation and I recommend you go further and try to make it your own (by like adding chilly flakes for example).

Serves 4

INGREDIENTS:

1.5 Packs of Quinoa Spaghetti Pasta
1 Pack of Bacon cut into 1 inch width
1 TBSP Red Wine Vinegar
1 TBSP Maple Syrup
10 oz Baby Spinach - washed (this will later shrink down so don't worry if you think it is a lot)
10-14 OZ Goat Cheese (4 OZ will be used for garnish)

DIRECTIONS:

Boil water for the pasta in a large pot. Add salt when it comes to a boil and let it dissolve for a minute before adding in the pasta.

While you wait for the water to boil, in a large skillet start cooking the bacon. Cook the bacon on a high heat until the edges of the bacon get crisp and brown then reduce the heat and continue to cook until all the bacon has become crispy and the fat has been rendered. You can remove the bacon from the skillet and set it aside in a bowl. You will need the bacon in a second. Do not though away the grease.

**You may think there is a lot of bacon grease left in the pan but this will be the base of your sauce so you can remove some but leave at least 3/4 of it in the skillet.

Next turn the heat up on the stove and add it your red wine vinegar. This may not smell nice at first but it will help to pull all the crispy bacon bits that are stuck on the bottom of the skillet back into the sauce and adds more flavor later. Make sure when you pour the vinegar in you mix it around in the grease and scrape the bottom of the skillet to help loosen the bits of bacon stuck there.

At this point your water should be boiling so put the quinoa pasta in. You will need to stir the quinoa pasta often for the first three minutes so that it doesn't lump together. After the first three minutes you can let it cook for an additional 9-10 minutes stirring occasionally. After that it should be al-dente! 

After about two minutes of scrapping the skillet add the bacon back in and the maple syrup and mix together.

Next slowly start to introduce handfuls of spinach into the pan. Stirring the whole time until all the spinach has been introduced.

Strain the quinoa pasta and add it into the skillet when ready. If the pasta is not ready just put the skillet to the side until it is. When pasta is ready add it in stir it up in the skilled so it is covered in bacon grease, bacon and spinach (no heat required anymore) Next add 9-10 dollops of goat cheese on top and stir in (the heat from the pasta will melt it into the pasta).

Twirl and place on a plate with a dollop of goat cheese on top as garnish and it is ready to be served.
