SAVOURY FLAKY SPANAKOPITA BITES

I was craving some flaky spanakopita the other day and decided to test my hand at baking it myself at home. Adam’s Baba (grandmother) makes an amazing Macedonian version called Zelnik so naturally, she was the first person I called. These little spinach pies ended up turning out amazing even though I sort of freestyled some of the measurements and combined Baba’s recipe with a couple of others I found. I mean, you can never have too much cheese, right!?

INGREDIENTS:

Serving: 24 Spanakopita Bites

-Spanakopita Filling-
Olive oil
1 Medium Sweet Onion chopped finely
6 CUPS of Fresh Spinach chopped roughly
3 Springs of Green Onions, sliced into thin pieces
2 CUPS of Italian flat parsley chopped finely
2 Cups of Goat and Sheep Feta
1 CUP of freshly Grated Halloumi Cheese
2 Eggs beaten lightly
Salt and Pepper

-Phyllo Cups-
1 (454 Grams) Packet of Phyllo Sheets*
3/4 CUPS of Melted Unsalted Butter
1 Egg beaten lightly

*Phyllo Sheets - Make sure that the phyllo dough is completely thawed.  It is super fragile so if it is not well thawed out it will break easily.  In general, be extra gentle when handling each layer of phyllo because it is so thin it will tear easily. You have to work a little fast because the dough drys out quickly. I first cut the phyllo layers into rough 4” squares using a scissor and stacked them to keep the air off them as I worked. You can also keep them under a slightly damp dishtowel. Work with one muffin pan at a time.

Butter your muffin trays making sure to coat the bottom of each cup and the sides

In a pan add in olive oil and finely chopped onion and saute until translucent.

In a large bowl add the sauteed onion with finely chopped parsley, spinach, green onion, eggs, crumbled feta, and Halloumi. Add a pinch of salt and pepper and combine thoroughly till well mixed. Set aside.

Preheat oven to 375 degrees and pull out your muffin trays. It’s time to create your pastry cups.

Add one 4” phyllo square to each buttered muffin cup mould on your tray pressing each sheet into the moulds and allowing the corners to point up. Little tears may occur -don’t worry to much about this! Just make sure on the next layer to cover the tear with some phyllo. Using a pastry brush, brush each phyllo sheet with butter before adding another 4” phyllo square on top. Do this until you have cups that are 5-6 layers thick.

Once complete, fill each cup with spinach mixture and fold over phyllo corners back towards the middle to create a cover. If they have died out, try brushing them with butter to help moisten them. There will be some flaking, don’t worry so much about it.

Mix the last beaten egg with remaining butter and brush the top of each muffin mould with the mixture to help keep the phyllo sheet corners together before placing muffin tins in the oven and baking for 35 to 40 minutes or until the top is golden

Once ready, allow muffin trays to cool for 10 minutes before trying to transfer cups onto a serving plate or cooling rack.

STRAWBERRY PIE WITH SHORTBREAD CRUST!

Since strawberry season is upon us I thought it would be perfectly fitting to make a strawberry pie last weekend. Since I was at the cottage and there is a lovely organic strawberry picking farm close by, off I went to pick my own strawberries! The result of that adventure was of course this delicious strawberry pie recipe. What is so clutch about this recipe (and can easily be used for any pie recipe) is the shortbread cookie crust bottom! WOW it's good! The best part is that even for a non pie maker/baker like me this recipe was so easy. Not to mention that the pie got devoured in one sitting and I had to make three more - I didn't mind.

INGREDIENTS:

CRUST
1/2 Cup of Butter (Softened)
1/4 Cup of Sugar
1 Cup of All Purpose Flour

STRAWBERRY FILLING

1 Quart of Strawberries (divide into two portions)
1 Cup of White Sugar
3 TBSP of Cornstarch
3/4 Cup of Water

DIRECTIONS:

Beat the soft butter with the sugar until fluffy.

Add in flour bit my bit until crumbly cookie dough starts to form. Press dough into a 9 Inch pie pan. Refrigerate for 10 minutes to harden

Preheat Over to 400 degrees (200 Celsius). After pie crust has been in the fridge for 10 minutes let bake in the oven for 10-15 minutes until golden and firm. Set aside to cool.

Separate the strawberries into two parts - you are going to mash half to create the filling and keep the other half to place on top for decoration.

Take the mashed strawberries and place in a sauce pot and bring to a boil, add in sugar and stir often for 10 minutes.

Mix cornstarch and water in a bowl and add into the boiled strawberry mixture - reduce heat to a simmer and allow to thicken.

Once ready remove from heat and let cool.

Once your strawberry sauce is cooled pour into shortbread crust and top with remaining strawberries.

Keep in fridge until ready to serve! It is great on its own or with some ice cream!

MAPLE PUMPKIN PIE

Although the fall means an end to summer, there is always something about the crisp fresh air of fall that brings a warm reminder of cozy sweaters, wood burning fires, and of course pumpkin flavored beverages and foods. This pumpkin pie dessert recipe I made over the Thanksgiving long weekend is definitely a crowd pleaser. The maple syrup sweetening base contributes to the pie's rich texture and flavorful filling. If you are asked to a dinner party this fall and you are looking for something to bring (other than wine) as a thank you to the host - this is it!

*Pie crust recipe is not included - any pie crust recipe will work.

PUMPKIN PIE INGREDIENTS:

1 1/2 cups of pure pumpkin pureé
3/4 cup of brown sugar
1 1/4 teaspoon of cinnamon
1 teaspoon of ginger
1 teaspoon of nutmeg
1/4 teaspoon of cloves
1/8 teaspoon of all spice
1/2teaspoon of salt
2/3 cup of maple syrup
1 cup of cream
1 teaspoon of all purpose flour
3 eggs
1 unbaked pie shell or use any pie crush recipe you have (9 inches)

DIRECTIONS FOR MY MAPLE PUMPKIN PIE FILLING:

Preheat oven at 350 degrees

Mix pumpkin puree, brown sugar, cinnamon, ginger, nutmeg, cloves, allspice, and salt in a large bowl. You can use a hand beater on medium/low speed. Blend until smooth, then stir in your maple syrup, cream, and flour.

Mix in one egg at a time using the blender until well incorporated.

Pour pumpkin pie filling into unbaked pie shell.

Bake at 350 for 1 hour. Remove and let cool before serving!

FOOTBALL PEPPERONI PIZZA PIES

Now that's a real pizza pie. Note that I only did this with pie crust because that's what I had in the fridge. They tasted great but personally as a pizza connoisseur I would have preferred to use pizza dough! I just like that texture better but that's just me. They still taste great it just depends on what you like. You do you! Anyways for Superbowl 50 I would totally add these to my menu. They are easy and filling and dont take to much time or effort to make. Your guest will definitely enjoy these little pizza pies and how they look like little footballs!!!

Yields: 3 Pie's

INGREDIENTS:

200 Grams of Pillsbury Pie Crust (you can also use pizza dough)
Tomato Sauce
Pepperoni Slices
Mozzarella Cheese
Garlic Powder *forgot to add this to ingredients photo

Ingredients for Egg Wash (Optional)
1 Egg (beaten)
1 TBSP of Milk
1 TSP of Salt

DIRECTIONS:

Preheat over to 375 degrees.

Roll out your pie crust and using a bowl imprint your football shape or use it as a guide. Cut out your football shapes - you can get about 6 of them out of 200 grams of dough. (If you need to roll up the dough in a ball and roll it out again to get another piece, do so.

Next add your toppings starting with tomato sauce. I did pepperoni and mozzarella cheese. I also sprinkled the pizza with garlic powder at the end for extra flavor. Using a clean brush use the egg wash along the edge of the football. Place another layer of dough on top and with a fork press down the sides to seal the football.

Egg wash the top of the football before cutting your football laces into the top of the football.

Bake in the oven for 20 minutes before removing and allowing to cool slightly.

Serve with a side of tomato sauce for dipping.

MINI ROSE APPLE PIE

Recently I've been searching for new recipes to try and add to my Superbowl Sunday menu. Next weekend is the Super Bowl which means a lot of friends across the nation will gathered around together and spend their entire Sunday eating and cheering for their favorite team! Even though I'm not a big football fan I still do enjoy participating in this event and getting together with friends to watch the game, drink and eat food. Since most of the time these gatherings don't involve an actual sit down meal finger foods and bite-size food are always a good choice. This way as people get hungry they can just grab a little bite and don't even need a plate necessarily. That is why I decided to try these mini rose apple pies. They are small enough to fit into your palm and take about two's bites to devour. Just enough of the dessert to satisfy you without having to commit to filling up on this one dessert choice. It also helps that they are super pretty! hehe

Servings: One 200Gr Pie Crust makes about 6 mini pies roses.

INGREDIENTS:

3 Apples (Washed and cut into quarters, remove seeds than slice thinly)
6 TBSP of White Granulated Sugar
1/4 -1/2 of a Lemon (juiced)
400Gr PiIlsberry Pre-made Pie Crust
Cinnamon Spice (as desired)
Icing sugar for garnish (as desired)

*You will also need toothpicks and a baking tray covered in wax paper/ nonstick baking sheet.
 

DIRECTIONS:

In a sauce pan add in your thinly sliced apples, 2 TBSP of sugar and lemon juice. Fill sauce pan with water to submerge your apples and place on stove on High heat. Bring your water to a boil, then reduce heat letting it simmer for an additional two minutes before draining the water.

Lay the apples out on a absorbent cloth to suck up any access water.

Preheat over to 350 Degrees.

Next lay out one of your pie crust. Sprinkle it with the remaining sugar (more or less as you please) and cinnamon.

Cut the dough into 3/4 to 1 inch strips and place your apple slices slightly overlapping along the strip. Roll the strip and tie off the end using a toothpick to hold it in place. 

Place strip on baking tray (previously covered with wax paper)

 Bake for 20 to 25 minutes or until golden.

 Remove from oven and allow to cool before sprinkling icing sugar on top. Enjoy!!!
