CLOUD BREAD *GLUTEN FREE & KETO FRIENDLY*

I know what you are thinking… Cloud bread? What is cloud bread? Well, it is a super fluffy, soft, delicious bread made from three ingredients! I first came across a cloud bread recipe while on TikTok and the fluffiness and name instantly caught my eye. Not only is it super easy and quick to make but keto-friendly, gluten-free, and so versatile - you can use it as a base for a pizza, or for your eggs at breakfast, etc. Best of all, it’s so delicious and I know you are going to love it just as much as I do! CLOUD BREAD INGREDIENTS:

Makes 6-8 Pieces

3 Eggs - room temperature
3 TBSP of Cream Cheese - room temperature
1/4 TSP of Cream of Tartar

HOW TO MAKE CLOUD BREAD - DIRECTIONS:

Preheat oven to 300 and line a baking sheet with parchment paper.

In two medium-size bowl, separate the eggs, putting the yolk in one bowl and the whites in another.

Using a hand mixer, beat the egg whites on a low-medium speed until bubbles start to form before adding in the cream of tartar. When ready, turn the speed up to high on the hand mixer and continuing to whip egg whites until stiff peaks start to form.

Next, in the bowl with the yolks, add in the cream cheese and beat until blended and smooth.

Next, fold the bowl with your egg whites into the bowl with the yolks and cream cheese. Try not to over mix because you will deflate your cloud bread.

When ready, scoop a dollop of the batter using a large spoon onto your baking sheet and bake for 20-30 until medium golden brown.

HEALTHY GRAB AND GO BREAKFAST EGG MUFFINS 2 WAYS - LOW CARB & VEGETARIAN OPTION

As someone who thrives on being a busy body, I often forget to eat or worse, go after items high in carbs and sugar as a way to sustain my energy and curb my cravings. Knowing this, I decided to make some delicious, healthy, grab and go egg bites that I can batch make and store in the fridge for easy access throughout the week. This has totally helped me choose better snacking foods and its super easy to just warm up quickly in the microwave before I head out the door. I love them in the morning or after a workout and they are packed full of protein and veggies so you can have two or three completely guilt free!

INGREDIENTS:

- Makes 12 Servings -

Butter to Greece Baking Sheet
!2 Large Eggs
1 Small Sweet Onion - chopped roughly
Salt and Pepper To Taste

- For 6 Muffins Italian Style -
1/4 Cup of Freshly Grated Mozerella
5-6 Cherry Tomatoes, Sliced
3-4 Strips of Prosciutto

- For 6 Muffins Greek Vegetarian Style -
1/4 Cup of Grated Halloumi
1/4 Cup of Crumbled Feta Cheese
A handful of Freshly Washed Spinach

DIRECTIONS:

Preheat oven to 350.

Greece baking tray wel.

Mix eggs, onion, salt and pepper in a large bowl and whip together.

Pour mixture into baking tray till each muffin cup is 1/2 way full.

Add in ingredients for both the Italian and Greek style.

Bake for 25-30 minutes until the tops brown slightly.

Remove and let sit for 10 minutes before trying to remove them from the tray.

Enjoy!

P.s You can store these eggs muffins in the fridge for 3-4 days in a ziplock bag or sealed container and warm up in the microwave for an easy grab and go snack!!

NUTELLA & MARSCAPONE FRENCH TOAST

Usually a savory over sweet person, this has to be the most decadent french toast I have ever had, not to mention the most beautiful. I honestly think you don’t even need the maple syrup because of how sweet it is already - its dessert for breakfast, lets call a spade a spade. LOL But damn was it good and so worthy of a post on the blog so here you go! Don’t blame me if you get a cavity! LOL

INGREDIENTS:

-French Toast For Two -

6 Pieces of Chellah Bread Slicked in 1’ Thick Pieces
6 Eggs
1 SP of Cinnamon
1/4 Cup of Brown Sugar
1/2 TSP of Vanilla Extract
1/4 TSP of Nutmeg
Pinch of Salt
Butter for the pan
1 Jar of Nutella
I Jar of Marscapone
Icing Sugar for dusting

-Additional Toppings -

Maple Syrup

DIRECTIONS:

Whisk eggs, cinnamon, brown sugar, vanilla extract, nutmeg and salt in a bowl until fully incorporated.

Heat pan on high and add butter. While butter is melting take a piece of bread and soak it in egg mixture, 4 seconds each side. Place in pan with melted butter and allow to cook until golden brown- flip and repeat to other side

When all the toast is ready spread a thin layer of Nutella between the first and second layer. Then spread a thin layer or marscapone between the second and third layer. Spread a thin layer of Nutella between the third and fourth layer.

Dust the stack of french toast with icing sugar using a sifter before adding maple syrup and eating.

MUSHROOMS ON TOAST

Mushrooms are a great source of Vitamin D and Iron! They are also low in calories which is great if you are watching your weight! I really like mushrooms on toast its not only delicious but a great way to boost your immune system if you are feeling run down. Mushrooms also can boost your metabolism because they have Vitamin B which is vital for turning food (carbohydrates) into fuel (glucose), which the body needs/burns to produce energy. Not to mention they taste good! Enjoy!!!

Yields 2 Pieces of Mushrooms on Toast

INGREDIENTS:

4 Cups of Mushrooms (I used a mix of Shiitake (remember to take the stems off) and Oyster mushrooms)
1-2 TBSP of Olive Oil
1/4 Cup of Fresh Sage - chopped
1/4 Cup of Fresh Thyme - chopped
2 Cloves of Garlic - minced or pressed
Salt and Pepper - as desired
Bread (Gluten free or Vegan Crackers can be used too)
 

DIRECTIONS:

Olive oil the pan and let it heat up on medium heat. Throw in your mushrooms and let that saute. The water will come out of the mushrooms.

Once the water comes out it will start to evaporate. When the water is nearly gone, throw in your garlic, sage, thyme and salt and pepper. The mushrooms will start to absorb the flavors at this point.

Continue to cook for another 10-15 minutes on medium heat. As they start to get golden brown you can reduce the heat.

Put you bread in the toaster and do your thing.

Spread the mushrooms on the toast and drizzle some of the juices from the pan on top and enjoy!

BLACK BETTY SMOOTHIE - DAIRY FREE/VEGAN FRIENDLY

Smoothies are a great way to start of your day full of fiber and nutrition that can otherwise be challenging to get on a daily basis. I called this one Black Betty because of its rock and roll, rise and shine, pedal to the metal abilities to get your day started!!!

INGREDIENTS:

3/4 Cup MANGO (frozen or fresh) - for its fiber, potassium and vitamin A which is great for your hair!
1 Cup Berries* (frozen or fresh) - for their natural antioxidants
1 Cup Coconut Water - for electrolytes that boost the minerals your body needs to function
1 TSP Spirulina (optional) - to expel toxins, is high in protein, vitamin Band other nutrients.
2 Cup Kale - Nutrient dense food (Vitamins A, K, C, B6, Magnesium, Copper, Manganese, Potassium and Calcium)
Half a Cucumber - anti-inflammatory that plays an important role in brain health.
Half a Lemon - for digestion and vitamin C
1/4 Cup Fresh Mint for digestion

DIRECTIONS:

Place everything in a blender and go!
 

* I used blueberries, blackberries, raspberries and strawberry frozen mix
